Customer Review: Delightful knife...that requires a special Asian blade sharpener. (So, really, it's twice this price.)

I agree with all of the rave reviews of this knife. It is a joyous length, weight, balance, and ample size in your palm. It makes me happy just to hold it! (OK, that sounds just a bit odd upon re-reading.)
Other reviewers have explained the knife's merits well.
But I was moved to write another review just because the reviewers and the manufacturer leave out a crucial bit of information: You will NEED a specialized sharpener for this. Santoku knives have a different angle from other knives. If you try to sharpen this knife with a "normal" sharpener, you'll permanently ruin its blade. Then, predictably, you'll write a review saying "got dull and could not be resharpened." Sigh.

Note that some Santokus are ideally sharp with 17 degree sharpeners, while others want a 16 degree sharpener. I don't know which knife this needs/prefers. If anybody knows, let us know.
This knife seems to me every bit as good as the much more expensive W?sthof Santokus, except that it doesn't stay sharp as long. But you can solve that with a few *very* light strokes through a specialized sharpener.
